Recipe Contest:

Killer (Your Appetite, That Is!) Green Tea

2 bags of your favorite green tea
1 tablespoon of honey, raw if available
1 teaspoon cinnamon

Put the 2 teabags and about 1 1/3 cup of water in a large microwavable glass cup. (I use my Pyrex measuring cup.) Nuke on high for about 1.5 to 2 minutes. In the mug, add the cinnamon to the honey and stir like crazy. Once it's hot, let the tea steep another minute or two, then add to the cinnamon-honey mixture slowly, stirring constantly. Cinnamon is difficult to dissolve, so it may require stirring while you're drinking it.

Calories: 64.
Total Carb: 17 g



Crispy Parmesan Chicken Breasts

1/3 cup Grated Parmesan Cheese
1/4 cup seasoned dry bread crumbs
1/4 tsp. paprika
1/4 tsp. black pepper
6 small boneless skinless chicken breast halves (1-1/2 lb.)
3 Tbsp. butter or margarine, melted

Heat oven to 400°F.

Mix cheese, crumbs and seasonings in shallow dish.

Dip chicken in butter, then in cheese mixture, turning to evenly coat each breast before placing on rimmed baking sheet sprayed with cooking spray. (I use the stick-free aluminum foil, rather than the spray.)

Bake 20 min. or until chicken is done (165ºF).

Six servings at 230 calories each.

RECIPE CONTEST ENTRY
Stuffed Cabbage 
1 pound of ground turkey
1 small onion, chopped
1 tablespoon of minced garlic
1 tablespoon of cumin
1 teaspoon of red pepper flakes
2 ribs of celery, chopped
All of the above in frying pa cook until meat is done, take off fire

8 large cabbage leaves
put the leaves in boiling water and cook them until tender, good and tender. they have to roll up.

Take the meat mixture and put 2 spoons full (about 1/2 cup) into leaf, fold and use a tooth pick if needed to fasten it.
put all of the rolls in a 9x12 inch baking pan
cover with your favorite marinara, tomato sauce
bake for 45 minutes
serve with a sprinkle of parmasean cheese





RECIPE CONTEST ENTRY
SUGAR FREE LEMON MERINGUE PIE
4 cups of water
3 small pkg. sugar free lemon jello
1 large lemon juice and zest
4 egg yolks
1/2 cup corn starch
All of the above in a saucepan, stirring constantly, bring to a bubble, when thick enough to coat spoon, take off heat. Add
1 teaspoon of vanilla
1/2 cup of sweetner (I used Stevia)
pour warm lemon curd/custard in pie pan
MERINGUE
4 egg whites
4 tablespoons of sugar
beat egg whites until soft peaks form, add sugar 1 tablespoon at a time
**I used Stevia and it did peak, but it was not very sweet, use sugar for a better merigne)
spread meringue over custard/curd put in fridge and let set for 4 hours I did not use a crust because I did not want the carbs.



RECIPE CONTEST ENTRY
MEDEITERRANEAN SALAD
1/2 English cucumber cut into bitesize pieces
1 cup of grape tomatoes
2 small avocados, peeled and chopped into bitesize pieces
1/4 cup chopped cilantro
--Place all of the above in a bowl and prepare dressing
1 lemon
2 tablespoons of olive oil
1 teaspoon of sugar of sugar substitute
1 envelope of good seasoning dressing mix
1 teaspoon of hot sauce
place all dressing ingredients in blender, blend. Pour over salad, toss and serve.




Soft serve ice cream 

Frozen fresh pineapple 1 cup
1 banana
2 tbls of vanilla greek yogurt (optional)

Blend and serve right away

Optional
Freeze banana as well for much thicker ice cream


Flour less pancakes:
I Banana 
2 Eggs (or 3 egg whites)
Optional
1/2 a scoop of your favorite protein powder (I used Walmart brand chocolate peanut butter)

Toppings:
Vanilla Greek Yogurt
Apple Slices
